It is finally sunny. The sky is so blue after all that rain. Beautiful day like this needs something refreshing and delicious.

Ingredients:

Orecchiette pasta (250), cherry tomatoes (200 g), cucumber (1), snow peas (100g), capers (1 tablespoon), olives (1/2 cup),  sun-dried tomato (1/2 cup), fetta cheese, parsley (1 tablespoon), thyme (1 tablespoon), basil, lemon infused olive oil (2 tablespoons), salt and pepper.

What to do:

  1. Place a medium pot of salted water onto boil. Add orecchiette and cook until al dente.
  2. In the mean time, chop tomatoes, snow peas, cucumber, sun-dried tomato, parsley and thyme.
  3. Toss everything together in a salad bowl, drizzle with lemon infused olive oil and season with salt and pepper.

Fig & Blackberry salad

It is summer time, I found some ripe figs and blackberries at the supermarket today. They are so marvellous!

Ingredients:

figs (2), blackberry (125 g), fresh mint leaves, lettuce leaves, goat cheese.

Dressing: juice of half lemon, honey (1 teaspoon), olive oil (half teaspoon).

What to do :

  1. Cut figs into quarters. Toss figs, blackberry, mint leaves, lettuce leaves, goat cheese together.
  2. In a small, mix all the ingredients for dressing together.
  3. Pour the dressing all over the salad.
  4. Serve as a side dish. (You can match with roast pork.)

Filei Calabresi with Goat Cheese & Oven Roasted Cherry Tomato

This pasta dish has a very simple and clean taste with little bits of surprises from chopped thyme here and there. It is now my favourite.

Ingredients:

Filei Calabresi (250 g), cherry tomato (300 g), oil (2 tablespoons), crumbled feta cheese, fresh thyme (3 sprigs), fresh parsley (1 sprig)

What to do:

  1. Preheat the oven to 200 degrees Celsius.
  2. Cut cherry tomatoes into half, and place them in a baking dish with cut side up. Drizzle with some oil. I used oil from one of the antipasto jar. Specifically it is from the cheese stuffed bell pepper, which gave the roasted cherry tomatoes awesome flavour.
  3. Roast the cherry tomatoes for 20 minutes.
  4. In the mean time, place a medium pot of salted water onto boil. Add filei calabresi and cook until al dente.
  5. Combine the pasta with the above oven roast cherry tomatoes, crumbled feta cheese, chopped thyme and parsley.
  6. Ready to serve.
