Roasted cherry tomato & ricotta on toast

roasted cherry tomato & ricotta cheese

It is a simple and delicious recipe. Everything works together perfectly. It would be great to serve it as an appetiser or brunch. Or just eat several of them and call it a dinner.

Ingredients:

cherry tomatoes (12), olive oil, ricotta cheese, basil, parsley, baguette.

What to do:

  1. Preheat the oven to 200 degrees Celsius.
  2. Drizzle cherry tomatoes with general amount of olive oil. Season with salt and pepper. Roast cherry tomatoes until they are caramelised.
  3. In the mean time, toast sliced baguette.
  4. Spread ricotta cheese on toasted baguette. Top up with roasted cherry tomatoes, basil and chopped parsley.
