This is a lovely side dish. It is garlicky. It is spicy. It looks fabulous!
Ingredients:
broccolini (1 bunch), garlic (2 cloves), red chilli (1), olive oil (1 tablespoon), salt
What to do:
- Into a frying pan heat olive oil over low heat, add sliced garlic and chilli and cook until garlic is nicely brown. Transfer them onto a paper towel to drain.
- Add broccolini into the above garlic and chilli infused olive oil. Fry for 1-2 minutes over medium heat. Then add 1 table spoon of water, season with salt. Reduce heat and cover with a lid let it cook for another 1-2 minutes.
- Transfer the cooked broccolini into a plate and garnish with burnt garlic and chilli.
- Serve as a side dish.
Note: don’t skip the cover with a lid step, that is how you infuse flavour into broccolini.
I make a very similar dish with Chinese gai lan instead of broccolini. So simple but so yummy.
