I am kind of surprised that homemade roasted capsicum and tomato tasted much better that the stuffs come out a jar. Not I am going to throw out my jars in the pantry. I am loving it to have roasted goodies for brunch.
Ingredients:
Cherry tomatoes (about 10, halved), Red capsicum (1, sliced), mushrooms (about 5, sliced), olive oil (generous amount), garlic (2 cloves, sliced), dried italian herbs (1 teaspoon), salt and pepper.
What to do:
- Preheat the oven to 230 degrees Celsius.
- Place all the ingredients in a shallow baking tray, sprinkle the herbs, drizzle with olive oil and season with salt and pepper.
- Bake for 30-40 minutes or until all the veggies are caramelised.
- Serve as a appetizer.
