I love oyster kilpatrick and it is super easy to make.
Ingredient:
Fresh oyster (a dozen), chopped bacon, worcestershire sauce, rock salt
What to do:
- Preheat the oven to 230 degrees Celsius.
- Clean the oysters, top with chopped bacon and a teaspoon of worcestershire sauce.
- Place rock salt, in a thick layer, on a baking tray.
- Arrange oysters (in their half-shells) on rock salt.
- Bake until bacon is crispy.
- Serve as a appetizer.

I’ve never prepared oysters this way, but it looks so simple and elegant, not to mention delicious. I was wondering what difference it would make to use less rock salt – what effect does it have on the flavour or texture, or is more for presentation?

It won’t have any effect on the flavour or texture. However, the rock salt is there to help oysters stand up properly. Otherwise you will have sauce running everywhere, and you end up with a mess.

I’m sending this recipe off to my parents, who spend every Sunday harvesting oysters. They’re always looking for great new ways to prepare them…and this looks right up our alley!
