Sichuan Spicy Rice Noodles

This is a simple street food in Sichuan province, China. I have to admit I have cravings for spicy Sichuan food every now and then. This is what I do when I have such cravings.


Fresh rice noodles (100 g), coriander and spring onion for garnish

Spicy sauce: chilli oil from Sichuan spicy hot pot sauce (2 table spoons), vinegar (1 table spoon), oyster sauce (1 table spoon), sesame paste (2 table spoon), soy sauce (1 table spoon), water (1 table spoon), minced garlic (1 clove), minced spring onion and coriander

What to do:

  1. In a small size pot, add water and bring to boil. Add rice noodle and boil for 2 minutes. Then turn off the heat and soak for 5 minutes or until rice noodle is soft and chewy. Drain and run through with cold water.
  2. In the same time, place all the ingredients for spicy sauce in a jar and give it a good shake until sesame paste is well combined with all the other ingredients.
  3. Serve the rice noodle with spicy sauce, and garnish with spring onion and coriander.
