Mexican food is delicious. I was immediately hooked since the first time I tried it. I love the flavors and complex spices. I haven’t been able to get the flavors right when cooking at home. So I am still at the stage of relying on packed spices. I also couldn’t help adding lots of vegetables to make it healthy.
Ingredients:
Beef Chili: extra lean beef mince (250 g), 1 brown onion, 1 green capsicum, 1 can of mixed beans, 1 pack of chilli spice mix, 1 table spoon of canola oil.
Tomato salsa: 1 big tomato, 1/4 Spanish onion, 1/4 cup of sliced Jalapeño, 1 tea spoon of Jalapeño juice, chopped parsley, 1 tea spoon of olive oil, salt
Guacamole: 1 ripe avocado, juice of half lemon.
Sour cream, Corn Chips, I jar of DORITOS mild salsa.
What to do:
- To make beef chilli, in a large frying pan heat canola oil at medium heat. Add diced brown onion and cook for 1-2 minute. Add beef mince and cook until the mince changed color. Then add mixed beans, diced capsicum, chilli spice mix. Cook for another 2-3 minutes and set aside.
- To make tomato salsa: dice tomato and Spanish onion. In a fresh bowl, mix diced tomato and Spanish onion, chopped parsley, sliced Jalapeño, 1 tea spoon of Jalapeño juice, 1 tea spoon of olive oil. Season with salt to taste.
- To make Guacamole: mash avocado in a fresh bowl and mix with juice of half lemon.
- To assemble the nachos: lay corn chips at the bottom of the plate, top up with beef chilli, tomato salsa, DORITOS salsa, guacamole, sour cream.
