How is it already Sunday? The weekend is always too short. I wonder when people can have three days weekend. I think three days are right amount of time to recharge. Of course, four days of work maybe a little short if you ever want to get something done. So I propose we should have eight days in a week. Five days work and three days weekend.
Today’s brunch looks fabulous. Here is how to make it.
Ingredients:
1 fresh capsicum, 1 tomato, 1 bunch of asparagus, 2 slices of sour dough bread, sun-dried tomato strips, salt and pepper. Fresh basil and semi dried parsley to garnish.
What to do:
- Grill asparagus, capsicum and tomato on a medium hot grill with some canola oil, until cooked through. Season with salt and pepper.
- While the grill is still hot, drizzle some olive oil over the sour dough bread and toast until crunchy on the crust and soft in the middle. Sprinkle the bread with semi dried parsley and sun-dried tomato strips.
- Garnish with fresh basil leaves, serve while warm.
